Tried my luck with Tempeh today !! (Yes, I was terrified of it before today)…
But now - I’M IN LOVE!! I am astounded at all of the nutritional benefits of this funky food (see link posted earlier today) and boy does it taste good!!!
I wanted to prove to my carnivorous friends that vegetarians/vegans can also BBQ great food on an open fire! I marinated my tempeh in BBQ sauce for about 1 hr. and then grilled the tempeh on the barbecue! I tossed it onto some Dave’s killer bread with a tomato from my garden, some spinach, and onions sautéed with fresh thyme and basil in coconut oil! Again… I am in LOVE!
Yum yum ! I looooove falafel! After eating at the Mediterranean kitchen in Bellevue, WA (near my home) I wanted to replicate the amazing falafel dish I ordered with spring greens, tomato, cucumber, red onion, tahini garlic sauce, and a wheat free pita…
I must say it was pretty darn good! I used Casbah Falafel mix to keep it simple (while I tried to distract my extremely energetic 3 year old)… Haha! I would call this meal a healthy success :)
So I was watching the Food Network and a show featuring America’s best sandwiches came on… Yum ! Of course they featured Philly cheese steaks… A big greasy sandwich sounded mighty good. Here is my take (and it tasted epic!) vegan cheese, lots of mushrooms to replace the meat (you can also use tempeh, but mine was frozen and I was feeling lazy)- bell peppers, onions, jalapeños if available, on whole grain hoagie ! Sautée all the veggies then toss on the bun with the veg cheese and broil on some foil for 7ish minutes ;) Bon appetit!
Breakfast Muesli and cucumber, lemon, and mint infused water to power up for a sunny spring hike! Putting it into a mason jar helps you drink more without even noticing the size of the container!
If your like me… Drinking water is a chore ! So the Flavors help minimize the difficulty ;)
The Muesli is nonfat Chobani yogurt, organic strawberries, kiwis, and gluten free granola with flax. YUM!
